PULLAU - (Traditional Goan rice with raisins and almond)



2 cups Basmati rice
1 large onion-sliced
3 dessertspoon vegetable oil
4x two inch sticks cinnamon barks
10 whole black peppercorns
6 whole cloves
1/2 teaspoon turmeric powder
Pinch of saffron
4ozs raisins
2ozs blanched almonds
4 cups stock of water
Salt to taste

Fry onion in oil in a large pan - add whole spice, and when infused turn down heat. Now add all other ingredients including washed rice and boil rapidly for 15min. Cover and cook until grains are tender.
